Social Distancing Three-Meat Breakfast Casserole

I’m not here to add to the whole “in these uncertain times…” posts. Yes, we are going through some shit. Something no one alive today has lived through, at least to this magnitude. All we can hope for is that our situation is something all of humanity will learn from, and hopefully good things will come out in the end.

My husband and I are practicing social distancing at the moment. We are both home, staying occupied and enjoying each other’s company. That is all we can do. In a bittersweet way, this social distancing allows me to cook up a storm, and blog about it. My two favorite things. It is a blessing in disguise in a selfish way because people all over can now find time to dedicate to their hobbies. I figure, as long as I have the time, I am going to work my ass off to make delicious food and let the world know about it. This is not to minimize the suffering of the sick right now. That is where the bitter part comes into play.

My beautiful and generous mother-in-law brought my husband and I a ton of groceries this week because on an unrelated note, my husband just had surgery last weekend. Long story for another time. Due to that event, my MIL wanted to make sure we had all the food we needed during this madness/after surgery.

I had breakfast sausage, ham, bacon, a ton of eggs, a ton of cheese among so many other things. Thus, Social Distancing Three-Meat Breakfast Casserole was born. The name rolls off the tongue, doesn’t it? Trust me, your tongue will thank me later.

You’ll need;

1/2 lb raw breakfast sausage, casings removed or squeezed out of the log

5 strips bacon

3 slices of deli ham, sliced thin

2 large Yukon gold potatoes, peeled and cut into 1/2 inch cubes

1/4 onion, diced

5 eggs, I like extra-large brown eggs

1/2 cup shredded cheddar, plus some more for topping

1/2 cup shredded mozzarella, plus some more for topping

1 tablespoon Chalula, or your preferred hot sauce

Nonstick cooking spray or olive oil spray

Preheat your oven to 350.

Begin with browning your bacon. Layer it into the nonstick pan over medium heat. (I used a dutch oven first and had to switch to nonstick. Just start with nonstick.) Drain on a paper towel-lined plate.

Once crisp, remove from the pan and add sausage. Allow the sausage to get some crispy edges by stirring every 2 minutes with no agitation in between. Cook on medium to medium-low. I had to turn mine down to keep from splattering.

Once sausage is cooked through, remove onto a paper towel with the bacon and let the oil drain away.

Lastly, add your ham to the bacon grease and cook until it shrinks and is warm, about 1 minute. Remove and cut bacon and ham into bite size pieces.

Cook your diced potatoes and onions next. On medium heat, add both to the pan with the bacon fat. Allow to get deeply crisp before removing, about 8-10 minutes.

Add all your cooked meats into a large mixing bowl. Add your eggs, cheese, and hot sauce. Mix together until all eggs are broken up and homogeneous.

Spray your baking dish with nonstick spray. Add the potatoes and onions to the bottom, acting as a crispy potato bottom.

Add your egg mixture over the top and smooth over evenly. Top with extra cheese if you please.

Bake at 350 for 25 minutes until the middle is set and the top is slightly golden. I actually threw on the broiler at the last 3 minutes to brown it slightly more.

Serve with garnish or no garnish. My husband picked off the parsley on top in the photos so maybe just leave that out.
